We use half a tenderloin fillet for this dish. You can purchase these direct from Muir Estate, just give me a ring 07468696363 and arrange a collection. If you’re local and in the Stirling area we can drop off and of course, if you are a guest and want to try this for yourself the venison is readily available for you right in your doorstep. They tend to be between 700-900g are £33 per kilo.
